watchOS 8.7.1 is a unique software update that only targets one device which is Apple Watch Series 3, to fix its reboot bug. Apple’s release notes say the following:

watchOS 8.7.1 addresses an issue that may cause Apple Watch Series 3 to unexpectedly restart for some users.

Apple had previously released watchOS 8.7 with bug fixes and performance improvements for all compatible Watch models.

Apple continues to sell Apple Watch Series 3, even though it will not be supported by the upcoming watchOS 9 software update which is currently in beta testing. The company has released some software updates in the past to fix issues with the aging watch model too. It is expected that Apple will stop selling this watch model later this year.

Due to its older hardware, we do not recommend that users buy Apple Watch Series 3 in 2022. If you are on a budget, it is better to get an Apple Watch SE instead or wait for the newer Apple Watch models which are expected to be announced next month.
